Ingredients

– 1 lb chicken tenderloin, diced
– 1 small onion, diced
– 2 cloves garlic, minced
– 1 cup frozen mixed vegetables (peas, corn, carrots, green beans)
– 1 can (10.5 oz) cream of chicken soup
– 1/4 cup milk
– 2 cups shredded cheddar cheese
– 1 bag (32 oz) frozen tater tots
– Salt and pepper to taste


Instructions

1. Preheat oven to 375°F (190°C).
2. In a large skillet, cook the chicken tenderloin with the diced onion and minced garlic over medium heat until the chicken is cooked through and the onion is softened. Drain any excess liquid.
3. Stir in the frozen mixed vegetables and cook for about 3 minutes until thawed.
4. Add the cream of chicken soup and milk to the chicken and vegetable mixture, stirring until well combined. Season with salt and pepper.
5. Transfer the mixture to a 9×13-inch baking dish, spreading it out evenly. Sprinkle 1 cup of shredded cheddar cheese on top.
6. Arrange the frozen tater tots in a single layer over the cheese and chicken mixture.
7. Bake for 30 minutes, or until the tater tots are golden and crispy. Remove from the oven, sprinkle the remaining cup of shredded cheddar cheese on top, and bake for another 5 minutes until the cheese is melted and bubbly.
