Ingredients

– 1 lb ground beef
– 1 onion, diced
– 3 garlic cloves, minced
– 4 cups chicken broth
– 2 cups marinara sauce
– 1 can diced tomatoes
– 1 tsp Italian seasoning
– 8 oz lasagna noodles, broken into pieces
– 1 cup ricotta cheese
– 1 cup shredded mozzarella
– Fresh basil, chopped


Instructions

1. In a large pot, brown the ground beef with the diced onion and minced garlic until fully cooked.
2. Add the chicken broth, marinara sauce, diced tomatoes, and Italian seasoning. Stir well and bring to a simmer.
3. Add the broken lasagna noodles and cook until tender, about 10-12 minutes.
4. Serve the soup topped with a dollop of ricotta cheese, shredded mozzarella, and freshly chopped basil.
